No-Fail Banana Bread

Here’s a great recipe for a scrumptious banana bread that is almost impossible to mess up.  I say “almost” because I’ve actually messed it up my first time to bake the bread.  Hahaha!  Again, I wasn’t paying close enough attention to the recipe and didn’t bake it quite long enough to cook all the way through.  Oops! 🙂

However, learn from my stupid mistakes and you WON’T be able to mess up your bread.   “That which does not kill us makes us stronger.” – Friedrich Nietzsche

You will need:

  • 1/2 C. shortening
  • 1 C. sugar
  • 2 eggs
  • 2-3 large bananas
  • 2 C. flour
  • 1/4 tsp. salt
  • 1 tsp. baking soda




Cream shortening and sugar.







Add eggs one by one until well blended.







In a separate bowl, mash your overly-ripened bananas.







Add smashed bananas and remaining ingredients.







After all ingredients have been well blended together and the sides of the bowl scraped and blended.







Spray and flour a bread pan then fill with batter.  Bake at 350 degrees for 1 hour (or until done).  After removing from the oven, let rest for 10 minutes before removing from pan.






If you don’t want the top of your bread to get over-cooked, place a small piece of foil over the top while baking.  I usually check mine after about 30 minutes of cooking and then cover for the remainder of the hour.  Doing this means you will most likely have to increase your baking time another 5-10 minutes.  Before you turn your oven off and remove the bread, ensure that the center has completely cooked by testing with a toothpick inserted in the thickest part.



Banana Bread

INGREDIENTS (for Double Recipe):

  • 1 C. shortening
  • 2 C. sugar
  • 4 eggs
  • 5 lg. bananas (mashed)
  • 4 C. flour
  • ½ tsp. salt
  • 2 tsp. baking soda

DIRECTIONS:  Preheat oven to 350 degrees. Cream shortening and sugar; add eggs until well blended. Add smashed bananas then remaining ingredients. Flour and spray two bread pans. Bake for one hour. Remove from oven and let set for 10 minutes before removing from pan.
