Chicken Broccoli Casserole

This is always a family favorite – except when it comes to leftovers.  Just a note that when you reheat this dish, the croutons come out a little soggy which grosses out a certain member of the family (coughTimcough). 🙂

Chicken Broccoli Casserole – by Toni Fuhrman

DIRECTIONS:

  • Cook & bone a whole chicken ( or boil two boneless, skinless chicken breasts)
  • Cook 2 bags of broccoli cuts.

Place cooked broccoli in 9×13 pan layer with (in order):

  • sauce
  • cheese
  • croutons
  • sauce
  • chicken
  • sauce
  • cheese

Sauce Mixture:

  • 2 cans cream of chicken soup
  • 1 can water
  • 1/2 C. mayonnaise
  • 1 tsp. lemon juice

*Make sure you completely cover dish with croutons or casserole comes out soupy.  Use any kind of flavored croutons.  Bake 30-45 minutes @ 350.

PS:  This recipe is very easy to half when making for a small family.
